Louie's Sweet Potato Soup

Ridiculously healthy. This always tastes better when the temps drop & the snow rolls in. I swear, you can lose weight while eating this soup!Here's what you need:

15 oz. can drained chickpeas

28 oz. can diced tomatoes

6 cups chicken or vegetable broth. I use low-sodium broth

2 large sweet potatoes peeled & cut into small cubes

2 tablespoons olive oil

one onion, chopped

5 thinly sliced celery ribs

5 minced cloves garlic

3 teaspoons papika

2 teaspoons dried oregano

1 bay leaf

salt & pepper to taste

Heat olive oil in Dutch oven on medium. Add onion and celery & cook until tender. Add sweet potato, paprika, garlic, oregano & bay leaf. A pinch of turmeric & ginger is optional. Stir to blend and add the diced tomatoes, broth and chickpeas. Bring it to a boil then reduce and simmer for 45 minutes. If you are watching calories, this soup comes in at around 30 calories per serving!
